    Another budget recipe to share. I made this one last night.

    Meatloaf

    600 grams mince (I used pork & veal but beef would work as a cheaper option)
    1 carrot grated
    1 onion diced
    1 tomato diced
    1 egg
    handful diced mushrooms
    Approx 3 tablespoons barbecue sauce
    Approx 3 tablespoons pizza sauce (tomato paste or tomato sauce should work just as well)
    1/2 cup breadcrumbs
    salt

    Preheat oven to 200c. Mix all ingredients together in a bowl. Press mixture into lined and greased loaf pan. Bake for approx 40 minutes until cooked.

    I served it with boiled potato done in the microwave.

    What I love about this recipe is you can base your decision about what veggies to include on what you have left in the fridge. It would work just as well with grated zucchini, diced capsicum, or diced celery in place of the mushroom or carrot.

    note - if you want to use grated zucchini be sure to squeeze the excess liquid out before you add it to the other ingredients.

    You can stuff a meatloaf for a yummy twist.
    Our favorite is whole boiled eggs and bacon.. Veggie sticks look great and cheese. Anything that when you slice look cool and tasty great.

    Pumpkin and ricotta pies
    Feeds 8 easily

    Puff pastry
    1/2Pumpkin
    Opt.. paprika
    Ricotta crumbled (150 grams is enough to feed family of 8 with leftovers)
    Eggs roughly 5 or 6
    Grated cheese a cup and 1/2 or to taste.

    Cut your pumpkin sprinkle with paprika and roast. Than mash.

    In a bowl mix cheeses and beaten eggs.
    Grease a muffin tray
    Cut puff pastry into quaters and stick it in the muffin hole taking care of the points so they don't stick together. Half fill pastry with pumpkin mash. Top with egg and cheese mix so it mounding. Put pastry points up over the mixture.

    Cook in moderate hot for 20 mins or so. Sorry I have a toaster oven so you may need to keep a eye on them.
