    Default Calling all bakers/cake lovers

    Thoughts??

    I'm planning my dads birthday cake. I'm thinking a double vanilla sponge, in the centre, instead of the traditional jam and cream, swap the jam out for a caramel. Topped with whipped cream, cream piped spirals and a solid caramel toffee decoration piece in them?

    sounds delish! for me personally, i would do salted caramel as i find traditional caramel overly sweet, but that’s an entirely personal preference.

    what about for the outside, do a caramel (or salted caramel drizzle)? sort of like what is pictured here https://www.kitchentrials.com/2018/0...-caramel-cake/

    also, for some drama, i love the idea of caramel shards, like a few large ones almost as cake toppers, to finish it off and provide some visual effect. IMG_1819.jpg

    i think you can also add crushed peanuts and make a sort of nutty toffee share type affair too. but may be tricky with little kids or if anyone has a nut allergy.

    Here's some things I was thinking like the shards... but those shards cascading is very effective.

    He's not a sweet person so I'd be working with fresh whipped cream as opposed to buttercream. So I think a basic caramel would be ok and not excessively sweet.

    When you say sponge do you mean a Victoria sponge? My concern would be that it might not hold the weight of the caramel. What about a vanilla butter cake?

    But you're right, I find sponges sink if you have a lot on them. A vanilla/butter cake would be better
