I’ve just tossed in 3 punnets of cut cherry tomatoes, chili, garlic, basil and olive oil in a big pan to roast slowly for 45 mins then I’ll toss through cooked pasta , grate tons of Parmesan cheese over and throw together a green salad is my easy dinner! plus there will be left overs for tomorrow night as we all don’t get home until 7.30pm (because it’s Father’s Day Ill add roasted prosciutto over DH,s bowl!)

Well we had Italian for dinner last night from our local and I forgot there’s leftover pasta so I’ve just cooked a bit of extra pasta, stirred through some cream and powdered chicken stock then added the leftover pasta and mixed it in and yummo! No wastage. Then just put in some dinner rolls in the oven and we are done!

we had steamed dumplings (store bought freezer ones) and got a couple of noodle dishes from our local thai takeaway place. all up, delicious!!

we had 2 packs of the diana chan ones which are great but at $7 a box, not really much cheaper than eating out. i got them on sale though. i bought some more but they were the hong kong dim sim kitchen brand. also on sale. dh initially thought they were another one of the coles ones we’d bought previously that weren’t very good and was disappointed, but he retracted that after he tasted them. we got the pork and chive dumplings and the siu mai, both were yum.

i know, it’s hard to get decent dumplings. we normally get them from the market but i told dh to relax today and not spend the day racing around like a lunatic.
i’ll be going back to coles tomorrow and getting a few more. at $2.50 they’re a bargain and it’s handy to have a tasty dinner ready to go in the freezer.

Roast lamb rack served with 2 minute noodles, corn cobs and steamed brocc and peas for my gormet little weirdos.
I had the lamb and was stuffed from the Father's Day afternoon tea I hosted for my dad and sister. Super stoked about the leftover Turkish dips I have for lunch tomorrow.

We ended up letting the kids have a piece of fruit and a bowl of ice cream last night. After our late lunch then a 2 hour drive home I wasn't cooking and no one was overly hungry.
Tonight it will be Turkey burgers and salad
