    Breakfast: avo toast (1/2 serve)
    Lunch: toasted sandwich with tomato, avo, capsicum & artichoke (1 serve) plus a few grapes

    Default 2 Fruit 5 Veg Challenge

    This is a great way to eat will start tomorrow.

    Today I had:

    Breakfast
    Banana coffee Date smoothie and Apple baked chips for baby and me
    2 FRUiT

    Lunch Oats with mapple syrup

    Dinner Vege Stew
    Spinach Kale Radish Cauliflower Cucumber Peas Onion Garlic Red and Green Peppers Beans and Celery with mustard vinegar and vege stock base. Salt pepper and spicy herbs to flavour.
    5 Vege

    Thanks for the inspiration...did the vege stew as had frozen vegies I wanted to use up. Then saw your post. Am motivated to eat better.

    Dinner was leftover chicken curry so probably about 3 serves of vegies plus some grapes (1/2 serve).

    Fruit salad (I use the term loosely🤣) for breakfast.
    Salad for lunch.
    Tomatoes and cream cheese on rice crackers for a snack
    Stir fried veggies and rice noodles for dinner - DH and kids had theirs with steak.IMG_9534.jpgIMG_9536.jpgIMG_9540.jpg

    I didn’t make the cut today for veg I only had tomato, onion & baby spinach.

    I did manage 2 serves of fruit though - strawberries & pineapple

    Default Some ideas

    Here is what I will be doing tomorrow:

    Breakfast
    Watermelon Pineapple Juice with a bit of Ginger water and ice.
    2 Fruit

    Lunch
    Banana Oats Dates Pecan with Maple Syrup Smoothie
    2 FRUIT

    Diner
    Penne Pasta with Vegetable Stew left overs from Sunday diner
    If i didnt have left overs would have Fish or Tofu with Rocket Tomato Cucumber Olives Sliced Carrots and Sliced Radish with Feta or Ricotta sprinkled on top
    5 plus VEG

    This thread is definitely helping me to think about what I eat!

    The kids are always offered a variety of nutritious foods. DD eats really well, and DS’s intake is variable. Family dinners are usually good, but it’s my own food the rest of the day where I fall down.

    Today, for example, DS got the last tomato & the last of the cucumber with his lunch. Usually I’d go ‘oh well, I’ll just have the chicken & cheese quesadilla’. Instead I cut myself up a carrot & had some lettuce.

    I'll be making my quota today.

    I had frozen berries on my muesli this morning, raspberries at lunchtime and will have some pineapple this evening.

    Lunch I had cucumber/tomato/baby spinach in a salad.

    Dinner will be Thai curry made by DH, which will have carrot/capsicum/sugar snap peas.
