I make quinoa or rice salad with roast veggies for work lunch.
Other alternatives are beetroot, feta and lentil salad, tuna nicoise etc
Or veggie soup and a roll.

Oddly enough I could eat more fruit I think. But I do eat tomato and cucumber so that might count

DS today had watermelon for fruit break and grapes at recess, cucumber and carrot at lunch , broccoli, cauliflower and carrot at dinner , I had punnet of raspberries at brekky, apple in the afternoon and had a salad roll for lunch (lettuce, carrot, cucumber, coriander, tomato so I’d say 1 serve combined) and easy 2 serves of rocket, pumpkin and red onion salad with dinner and thanks to this thread I’m just grabbing a carrot and some peas to snack on to make sure I’m at 5 veg today

So for yesterday - breakfast, smoothie. Lunch - roast pork and salad sandwich, fruit in the afternoon. Dinner was tacos with lots of salad.

I did do the 2 fruit - but not quite the 5 veg.

I made myself a fruit salad for breakfast and had a big bowl of veggie, cannelini beans and pearl barley soup for lunch and will have leftovers for dinner so I'll get my 2 and 5 in today.

    I’m up for the challenge

Most days I do eat 5 veg. I eat fruit once or twice a day in the week, but sometimes no fruit on weekends.

I’ll start on my challenge tomorrow after I do my grocery shop.

    Today I’ve consumed:

    Mixed berries
    Lettuce/mixed leaves
    Tomato
    Baby spinach
    Avocado

I'll join but probably fail. I'm very time poor atm and dh isn't doing a lot of the cooking. Usually I love eating lots of vegies and struggle more with fruit.

    Today wasn't too bad though:

Breakfast: scrambled eggs & slice of toast with avo (does that count as fruit?)
Morning tea: 2 serves of fruit from a platter of pear, pineapple, kiwi fruit, nectarine and raspberries.
Lunch: ham & avo wraps (probably 1/2 serve here)
Afternoon tea: snuck some of ds's easter chocolate
Dinner: chicken & veg curry (3+ serves of veg: pumpkin, beans, carrot, zuchinni & broccoli).

    Default New Challenge - 2 Fruit 5 Veg !!!

I need to do this. I used to be such a healthy eater but stress and workload got me into bad habits. I need to shift 5kg so will be trying to adjust my diet.

ETA - I’ll start tomorrow... today was English muffin for breakfast, chicken burger (it had lettuce on it though!) and chips for lunch, lemonade ice block for afternoon tea, spag bol for dinner (lots of veggies in this), buttered fresh popcorn just now with the kids for family movie night. Not great....
