    Hit my target today - apple and grapes for breakfast, leftover stir fry for lunch and pesto chicken and roasted capsicum, red onion and tomato with baby spinach on the side.IMG_9547.jpg

    Ok this looks delicious. Will try recreate.

    I have just done this challenge for 2 days and already have more energy am going to keep it up for at least a month.

    Ill try work out how to post pick of food.

    spinach salad for lunch, and a nice stir fry with chicken for dinner

    Default New Challenge - 2 Fruit 5 Veg !!!

    So far today I've had my two fruits - mixed berries & kiwi fruit.

    Lunch included cucumber & tomato. Something tells me I might be pushing it to get my 5 serves of veg today! DH is working tonight, which means I don't go to much trouble for my own dinner. I have some leftovers to play with, but nothing laden with veg. Will try.

    ETA: dinner has avocado, baby spinach, onion & potato. I did it

    Yesterday was fine.

    Fruit - dried fruit, apple
    Veg - carrot, lettuce, pumpkin, beetroot, avocado

    Today though... I’ve had about 1 serve (salad veg on my roll for lunch). Probably won’t be much else. Work days are hard ‘cause work provides meals, and what there is depends on who did the shopping.

    Do you bring your own snacks or do they provide everything, because you could always get those little tubs or hommus or avocado dip and some cut up veggies?

    I'm travelling ok today - orange and grapes for breakfast and I put the leftover chicken and veggies from last night with a couple of good hand fulls of baby spinach and some balsamic dressing. Spag Bol for tea tonight.

    I'm amazed at how many struggle with the fruit and veg intake, good on you for sharing ideas. We as a family easily eat our daily share of each. Hubby is a big yogurt with fruit including raisins and figs fan, we both have a smoothly nearly daily as do the boys. The boys have 2 pieces of fruit in their lunch boxes and it's the first thing they have when they get home from school and we always include a fruit with dessert when we have it or if we don't the boys will have a piece of fruit if hungry after dinner. We always have 2 vegies with a dip/hommus for snacks, It isn't often lunch doesn't include vegies/salads of some sort and we always have either salad or vegies with our evening meal.

    I probably struggle most with getting 2 serves of fruit. Veggies I generally manage.

    I usually have fruit with kids at morning tea, but I am their seagull - I eat what they don’t finish. For example: a quarter of an apple, the last few berries from a punnet, slice of watermelon.

    Veggies I have at lunch and dinner. Lunches i have same as kids... it’s in meals - fritters, slices, salad sandwich, stews, soups, veg pasta bake type stuff. My go to for veggies at dinner is a large bowl of raw veggies - carrot, broccoli, cauliflower, sugar snap peas. Broccoli florets can be a bit bitter at times but the stems are perfect.

    I am also partial to a cup of frozen corn and/or peas (though not whilst pregnant) as my late night snack after some chocolate.

    So my diet probably lacks most in fruit (and calcium... but that’s a different thread). Perhaps I should switch my daily breakfast of toast to a smoothie and kill two birds with one stone!

    ETA: the kids have definitely helped me to eat more fruit/veg as I eat what they eat and want to set a good example. Pre-kids, some days a bag of potato chips would be my veggie load

    Default Sweet Potato Chips

    Yesterday i had:

    My favourite Banana Date Oat Cinnimon Smoothie with Almond milk for breakfast and lunch and some baked Apple Chips and Watermelon
    2 FRUIT done

    Diner was Cucumber Tomato Peppers Olives salad with Vinegar and Lime and salt and pepper. Plus 2 rice wraps.

    Looked at it wanted to make the 5 ..so put 1x Sweet Potato in oven ..cut into chips ....just added salt and pepper.

    Only problem here is olives to me are a vegetable but if you google it it says its a fruit...so to is tomato and cucumber ....i feel like my intent is good so should be good enough.

    Or does it have to be the carrot broccoli cauliflower kind of vegetable?

    so yesterday I had

    smoothie for breakfast (I usually have a smoothie at some point, and have a banana during the day as well, so pretty much always get my 2 serves of fruit

    vegies - salad at lunch, and some vegie sticks and dip for a snack

    dinner was pasta with chicken, tomato and zuccini. it had probably 2 serves of vegies
