Not very pretty, but scrambled egg and avocado.

Thank you so much @gingermillie that onehandedcooks website looks amazing, going to get some ingredients today to make a few things this week.

Thank you so much @Elijahs Mum great tips there. With the spinach in things like scrambled eggs, do you think frozen would be ok? We dont use spinach in anything we cook and dont want to waste any. Will also try adding some fresh herbs to things. DD loves curries and chicken fajitas so i think the extra flavour of herbs will hopefully work! Can only hope

Do you use chia and quinoa much?
@M'LadyEm that is one of DD's fav meals! She would eat avocado all day everyday if we let her, but at $3 a pop we'll be broke by xmas how old is your DD now?

Yep fine - just squeeze all the excess moisture out - you only need a bit! Dried herbs are fine too - I love coriander and so does DS (DH hates it!)
I put chia seeds in everything from eggs to smoothies to salads to on top of sausage rolls!
I love quinoa but the boys not to much (except my quinoa tabouli!) but I use quinoa crumbs for crumbing or adding to burgers and quinoa corn flakes for my crumbed chicken wings

@MrsMummaButterfly like @Elijahs Mum I used chia seeds in everything they're so easy to include! Anything baked I put them in and dd would have them in her breakfast cereal, rissoles, veggie fritters etc

    Thanks @Elijahs Mum and @gingermillie

I just made the chicken, quinoa & broccoli nuggets from the onehandedcooks website! They are so yummy! Will give one to DD for lunch to see if she likes
