No, I make it as I go. We just wouldn't have the freezer room to store the meals. We have two chest freezers but we live 400kms from the shops so we shop in bulk. I would love to be able to freeze meals. Maybe one day we will get a walk in freezer.

I took the photo after we started eating it but an awesome indulgent and very easy Sunday breakfast - one pan blueberry hotcake , cooked in the oven for 20 mins then drizzled in maple syrup, fresh berries and marscapone cheese (I just got a new oven so am trying heaps of new things!)

Finally managed to whip up something new. Spinach and ricotta pie. I was going to do cannelloni but thought I'd try the pie instead and it was really tasty!

Don't resolve yourself to being crap just yet. Honestly, until I met my DH (7 years ago) I couldn't even boil an egg. I grew up in a household that exclusively ate food from box in the freezer, and even then it was poorly cooked sometimes. Now, people often approach my husband about my cooking, to compliment it. I do a lot of cooking and baking for community events.

So if I can learn, you can too

Very easy recipe - I used a box of frozen spinach, about 400g of ricotta, 3 eggs, onion, garlic, pastry sheets.

Chop and cook onion with garlic in a pan, add the spinach for a minute or two then set aside. Mix ricotta and eggs, add onion/spinach mixture, mix it all together. Line pie dish with pastry, pour in spinach & ricotta mix and cover with more pastry. Bake for about 45min at about 180-190C

Ok, I've been hopeless, but in my defense I have been crazy busy. Sat my exam yesterday so now have some time before semester 2 starts.

Here's tonight's effort. Taco boats! The meat sauce is my own homemade taco mixture and I just baked it with cheese in those mini burrito bowl things and added sails to make them boats! Kids love them.
