    hollandaise sauce I always f!ck up. the butter always splits. every time. without fail. gave up trying years ago.

    I made scones once too, they were also like rocks.

    Meatloaf. The last time I attempted it - ended up as a lump of mince swimming in watery liquid! The dog wouldn't even eat it. Haven't attempted since.

    Snapper fillets. Never used to have this problem but of late they are always rubbery no matter how I cook them. Used to be my favorite fish to cook with but I stick to whole snapper now.
