I don't de-strong my celery either. I peel almost everything (potato, pumpkin, carrots etc) I do however pop the ten out of the mushrooms and feed them to the chooks unless hubby is around he'll eat them. Odd I know lol

After reading this thread and preparing a veggie stick platter (we always go out for a big late-ish Sunday lunch so never bother cooking)... I was peeling the celery, DH walks into the kitchen, is in the middle of talking and then says "wtf are you doing to the celery?"
Not sure I will bother again, we don't mind the stringy bits. Always peel carrots except when making broth.

Me too! I only do the pretty half peel for fancy salads for guests, otherwise no peeling for cucumbers.
I don't get what you do with mushrooms if you don't peel them? Do you wash them?

    What?! That's a thing?

God I can barely be bothered cooking as it is! Imagine if I was destringing celery and peeling mushrooms too. We'd never eat!

I can answer the mushroom thing!

Never wash. You get a damp cloth/paper towel and rub off the dirt etc.
