I second littleriv's suggestions. Frozen cooked meals that can be heated up on the stove top would be your best bet. Things like bolognese, thai curry, butter chicken, creamy chicken casserole, beef casserole, beef stroganoff, garlic prawns. Then when you're there all you have to make from scratch is rice or pasta and maybe a side salad.
I do this when camping. I freeze in big ziploc bags as they can be frozen flat, take up minimal room and you don't need to worry about the container coming home.
Mexican is quick and easy - tacos/burritos etc
