Chicken chops in a tomato or mustard sauce can freeze well and reheat easy. Spaghetti is quick as is chilli (can turn down the heat if not sure), homemade macaroni and cheese.

make a big batch of risotto and divide into individual serves to freeze. she can just heat and eat, no additional cooking required.

rice is cheap and you could do a veggie risotto using in season winter veg. beetroot is my fave winter risotto (unsure if beets are everyone's preferred flavour). you could just keep it generic with pumpkin and pea or leek

My mum stocked my freezer with the following; curried sausages, chow mein, tuna casserole, bolognese sauce, shepherds pie, eggplant lasagne and chicken & veg soup, she is in a pension and managed to do it on a budget. Or so she said.

dh made meatballs in that masterfoods Tuscan sauce too. we basically lived off that in those first few early newborn weeks. they freeze beautifully. we'd just serve with cous cous and some frozen veg brought back to life.
