    Default Recipes with kidney beans

    So all 3 of my kids looove kidney beans. They are 7 yrs, 2 yrs and 8 months ( we do blw with 8 mth old). I often make a quinoa and veg salad that I put kidney beans in and my oldest always requests that I make more things with kidney beans, and my toddler picks the kidney beans out to eat them first before eating the rest.

    Does anyone have any yummy recipes? Preferably that will be suitable for blw with my youngest?

    I make like a bean paste for want of better word - I use it on wraps, sandwiches, sometimes I make it a thinner consistency and use it for dips wth crackers or vege sticks etc.... I usually use a variety of beans (kidney, berlotti, haricot, cannelini, chikpeas) but you could just do it with kidney.

    So I saute onion and garlic until opaque, add the beans (if using canned wash thoroughly), add a small amount of liquid stock and simmer. Once beans are cooked thoroughly I add whatever spice or herbs that take my fancy. Then purée and season to taste. To use as a dip add more liquid.

    If I'm using it as an alternative to meat in tacos/nachos (I'm vegetarian) I add a homemade taco seasoning mix I have in the cupboard.

    I have also added fresh tomatoes and basil which gives a great consistency for a dip.

    Another good dip is the bean paste, yoghurt and tahini.

    Otherwise as I said add whatever herbs/spices you want and think the kids will eat.

    Tacos/Nachoes!! I always add kidney beans to the mince mix...

    Default Recipes with kidney beans

    Veggie Burgers - or for BLW just make mini patties!

    2 cans red kidney beans, rinsed and drained
    1 medium carrot, peeled and shredded
    1 teaspoon fresh parsley
    1 teaspoon chia seeds
    1 garlic clove grated
    3/4 cup dried panko breadcrumbs
    2 large eggs, lightly beaten

    Just mash the beans with a fork and mix in the rest , form patties and put in fridge for 30 mins before cooking ( splash of olive oil and fry on both sides for a minute or two)

    I have one with an oven baked sweet potato some seasoning and beans. Will have to find it if you would like, but everyone loved it when I made it

    A can of kidney beans, a can of diced tomato, a diced onion and a packet of taco seasoning mix. Mash a little then serve on top of corn chips (or toasted strips of tortilla for littlies) with avocado, sour cream, a sprinkle of tasty cheese and a little fresh coriander and voila - nachos.

    ETA: I leave out the seasoning mix for DS1 and DS2.

    I'm mad for kidney beans too. In summer I live off tuna salad with kidney beans, corn, capsicum, celery and cherry tomatoes.
