Dumb question from someone who never buys or drink fizzy drinks....can't you just wait a few minutes for it to settle and then open it?

Yeah you can but it generally tastes different and sometimes it's enough for it to go flat. In my experience, anyway...

I can't for the life of me drink flat soft drink and especially not Coke, so suffice to say I would do a sneaky and put it back/grab a new one.

I'd put it back in the fridge. I also put fruit and veg back on the shelf if I knock it on the ground. Clearly I'm not to be trusted.

Depends - if I wasn't going to drink it until later, I'd still buy it and drink the other bottle that wasn't dropped.
If I was buying a drink for myself and a companion to drink immediately, I'd put the dropped one back (towards the back) and grab another.
Fizz is not a huge concern for me though - I'll drink flat-ish soda without batting an eyelid. Especially lemonade. BOOM!
