    Default Show us your salads!

    So I desperately need to start eating healthier!

    Sometimes when I go out, restaurants and cafes make the most amazing salads with yummy dressings, but my salads taste like, well boring vegetables.

    Does anyone have any really yummy, healthy and quick to make salad recipes?

    I love making salads!

    Here are some good combinations (I add these to the usual garden salad base and generally use French dressing):

    Tuna, egg, peas and sweetcorn

    Chicken, bacon, avocado and cheddar

    Four bean mix and slivered almonds

    Haloumi and strawberry

    Feta, pine nut and watermelon

    Sweet potato, pumpkin, prosciutto and wild rice

    One of my favourites is roasted sweet potato and beetroot with spinach and walnuts.

    My dressing is usually crushed garlic, seeded or dijon mustard, white wine vinegar and olive oil shaken in a jar and kept in fridge.

    I like blanched green beans as a base, then add toasted almond slivers or sticks, dressing, lemon zest on top.

    You can add crumbled feta, baked beetroot.

    I also like mini iceberg lettuce leaves topped with homous, serena tuna, spring onions, coriander, chopped mint, sprinkle with paprika, lemon juice, lemon zest.

    Our go to ATM is baked pumpkin, baby spinach, bacon, pine nuts, cherry toms, shaved Parmesan and whatever dressing I can go throw together. Yum!

    I have a few favs :

    Quinoa tabouli ( 1 cup cooked quinoa with chopped fresh parsley, red onion, tomato, cucumber, feta cheese, pomegranate seeds, pumpkin or any seeds with lemon, oil and balsamic vinegar )

    Roast pumpkin and haloumi
    Roast cubed pumpkin , pine nuts, rocket, grilled cubed haloumi, red onion with lemon juice , olive oil and caramalised balsamic vinegar

    Chopped veggie salad
    Cubed carrot, broccoli, cauliflower, Apple, red onion, beetroot, celery and goats cheese feta , olive oil with white balsamic vinegar

    My new fav is Moroccan couscous
    1 cup cooked couscous, chopped red onion, fresh parsley, fresh coriander, red capsicum, sultanas, chick peas with lemon juice and olive oil and red wine vinegar

    Salmon Caesar salad - make a normal Caesar instead of bacon add chopped grilled salmon fillet

    Vietnamese salmon noodle salad
    Grilled salmon flaked into cooked rice noodles, fresh coriander, chili, red onion, lime juice, fish sauce, sweet chilli sauce and olive oil

    Watermelon salad is the best.

    Slice a red onion and marinate in lime juice until you're ready to serve. Then cube watermelon, a bunch of mint, torn, Danish feta, crumbled, and whole pitted Kalamata olives. Chuck the onion in and toss. Best summer salad.
