So I want to bake a heap of goodies for the kids lunch boxes, as they go back to school tomorrow 😕 sniff sniff

I'm getting set to do this today. Baking and doing freezer prep.
-Cookie dough rolls to freeze. Then just slice and bake when needed.
-Scrolls to freeze. Slice and bake when needed. I'm doing Moroccan sausage scrolls, and pizza scrolls.
I'm also going to bake some cornflake cookies today as boxes of cornflakes seem to breed in our cupboard. Ditto to rice bubbles, so I sometimes make LCM type bars.
I'm going to try and teach myself to make sushi today too.
Dips are good, but my kids don't like them, so I'm making them for me. Today I am making beetroot dip and sesame lavosh.
Other things I make-
-cheese and bacon rolls
-other kinds of puff pastry scrolls
-I'm going to attempt mini quiches

I'm attempting ricotta and spinach arancini today- will report back whether it's a hit or miss. I'm hoping they will keep warm in a thermos.

Back to school baking
I'm doing today raspberry mini muffins , veggie egg muffins , salmon rice balls and poaching chicken to make chicken salad for his wraps

Thanks for the replies! Have been out of the baking game for a while due a hectic uni schedule... Thought I better pull my finger out while I've got 2 weeks off.
Oh and sushi is super easy once you get the hang of it. I don't even use a Matt now just roll them up tightly 😊
