Grand hyatt is nice in public areas (I've never stayed there), park hyatt, sofital, westin, Hilton at docklands

We usually stay at the Sofitel, the corner rooms are lovely great views.

Agree the Windsor is lovely. Heritage listed and very aesthetically pleasing.
DH has stayed at the Sofitel and gives it 2 thumbs up.
I stayed at the Marriott a few months ago and it was lovely. Service is exactly what you'd expect from a Marriott. Would def recommend.
I've stayed at the Novotel a few times too. Great location on Collins St. Easy walk to Bourke St mall, Flinders St station, opposite Tiffany's for some anniversary gift inspiration 😉 and some lovely cafes in the Block arcade for breakfast (plus my favourite, Haigh's!)
