    Finally finished, this ended up taking so much more time then I anticipated! But it's finally done! DS's bday cake.

    I'm on ivf and although bound to put on 1000kg whilst doing it, I'm eating healthy food most of the time but my hormonal sweet tooth needs sugar!! This is my sugar free alternative to chocolate that I eat when I'm needing a choc fix! Cashew choc 1 minute slice.     6 tablespoons almond butter
    3 tablespoons coconut oil
    3 tablespoons rice malt syrup
    1/2 tablespoon vanilla extract
    2 tablespoons raw cacao
    1/2 cup chopped or whole cashews
    Pinch of salt

    Mix all ingredients well in a bowl except for cashews.
    Add cashews and mix.
    Scoop into a lined loaf tin.
    Refrigerate for a few hours before eating.
    Even better the next day. Store in fridge. I just chop bits off and eat it.
    You could substitute almond butter for peanut butter, cashew butter and add different nuts or even coconut chips to the mix.
