@misskittyfantastico, your scrolls put mine to shame!
I couldn't sleep this morning so made some scrolls with spinach, cheese and ham. Either kids will have it for breakfast or take to school.
Think I didn't put enough baking powder or too much yogurt, the bread texture is too doughy.

how do you make scrolls? they look like the ultimate comfort food and I want some!! great job ladies!!

I will just pretend for a second that you are asking how I make my scrolls lol - they look pretty awful haha
Anyway I am lazy so dont measure but i use approx:
1 cup plain flour plus 2 tsp baking powder (or self raising flour)
1cup plain greek yogurt
Mix to a dough and roll out on a floured surface
Then add baby spinach leaves, shredded cheese and ham/salami
Roll it up tightly to a log
Cut it up and place in preheated oven at around 180 degrees C
I use different toppings. A popular one with my kids is grated apple, sultanas, cinnamon and tiny bit of sugar.
