    We used to get this cheese from various older European people (who had a cow or two).

    No idea what cheese it is. The cheese is not quite cottage cheese. You got it in a big chunk and it was somewhat sliceable (I used to cut off a thick slice and cover it in plum jam or honey). I would say it is more like ricotta in taste though.

    The filling I use is literally just potato and onion. Boil and mash potato, mix through cooked (slowly browned/fried in butter) onions... Salt & pepper to taste. Simple! I have never tried adding cheese but want to as whenever I buy them pre made they always contain cottage cheese. Just concerned I'll ruin them because it has to be well drained and pierogi filling needs to be cold and firm when making.
