    Default Muffin recipe

    What's your favourite basic sweet muffin recipe? I want something that's going to remain moist and that I can just throw whatever sort of fruit I have in it.

    I made these the other day using canned apples instead of fresh. They were really nice, the whole batch got eaten in 1 day.

    I got this recipe from my local cafe - they are soo yummy!

    Lemon muffins with lemon syrup

    Ingredients
    - 6 large eggs
    - 225 grams butter
    - 300ml Sour cream
    - 2 cups Sugar
    - 2 cups self raising flour
    - Lemon zest and juice of 1 lemon
    - 1 teaspoon Vanilla extract

    Instructions

    Don't pre heat oven
    Cream butter and sugar
    Add eggs 1 at a time
    Add vanilla and sour cream
    Add juice
    Then fold in flour and bake in oven for 20-25 mins

    Lemon syrup

    Ingredients
    - 1/4 cup fresh Lemon juice
    - 1 cup Sugar
    - 3/4 cup Water
    - zest from 1 lemon

    Instructions
    1. Boil for 5 minutes

    Poke holes in lemon muffins with a skewer and spoon over a tablespoon of lemon syrup!

    I ended up using a very basic one tonight. It's just:

    2 cups SR flour
    1 cup sugar
    Pinch of salt
    1 egg
    3/4 cup milk
    1/3 cup oil

    I then threw in a cup of blueberries.

    They turned out really nice.
