    Leftovers here as well, which was chicken breast in a salsa/chorizo/mushroom casserole type sauce that DH made Friday night, served on mashed potato with a rocket and spinach salad.

    Salt and pepper eggplant and chicken. Was meant to cook rice but everyone scoffed the eggplant and chicken before I got a chance.
