I make zucchini fritters for DD 8 months:
1 grated zucchini
About 4 spring onions finely chopped
100g fetta finely crumbled
1 cup SR. Flour
Milk to make a stiff batter (you could use water)
Fry in non stick frying pan. I freeze them individually then defrost, smear with hommus (I make my own with no salt) or cottage cheese & cut into fingers for her to eat. They get demolished.
The fetta is salty so you could reduce the amount if you were worried, but I like it in there for a bit of protein.
