    Last night I made a zesty quinoa salad with spring onion, baby spinach, dried figs, quinoa, coriander and a chilli, lime, mayo and lemon dressing.

    This one I stole from my cousin but it is my fave! So fresh and delicious and I love cous cous ( the food so nice they named it twice)

    500g cous cous
    500ml veg stock
    1 cup chopped dated
    1 cup chopped pistachios
    1 bunch chopped coriander
    1 bunch chopped mint
    1 bunch chopped parsley
    1 punnet cherry tomatoes halved

    Dressing
    Juice 2 lemons and rind
    2 tbsp olive oil

    Just prepare cous cous with boiled veg stock. Add all ingredients. Dress before serving.

    Does anyone make their own pasta salad? Dp is craving it but do you think we can find GF pasta salad anywhere?

    Try the "warm chicken pasta salad"on taste.com.au. I make it all the time, it's yum and tastes great as leftovers the next day.

    Broccoli salad - so good and tasty, my husband will eat it non stop and he is someone who screws his nose up at salads/veges!

    Finely dice up 1-2 broccoli (depending how big they are) so it's almost like Cous Cous - add some of the stalk finely diced for crunch.

    Finely dice up red onion and add

    Dice up some bacon - I use short cut bacon and fry off in pan. Add to broccoli mix.

    Add enough mayo or miracle whip to just coat mixture and make it glisten - not enough to go sloppy!

    I sometimes add some toasted slivered almonds, but no need.

    Even better the next day. Yum and super easy!

    Default Salad ideas and recipes please

    - Rocket and spinach mix,
    - topped with pumpkin slightly cooked in MW then quickly pan roasted in olive oil.
    - add feta cheese
    - berenberg caramelised onion
    - toast pine nuts in pan and sprinkle on top.
    - if you want small drizzle of balsamic glaze.

    Yum yum 😚
