Pear, rocket and haloumi salad is pretty good. Just grill or fry wedges of pear and slices of haloumi and serve on a bed of rocket.

The best caesar salad dressing by far is cardini's brand. Trust me on this i spent months hunting for the perfect one at one point.

I make a yummy orange and prosciutto salad which everyone seems to love

    Rocket & baby spinach

Orange/s peeled and cut in wedges

Couple of avocados again in wedges

    1 red onion in wedges

Prosciutto, saltier the better, you need to tear it up and pan fry it just so it's crispy.

I usually have the bed of the salad mixed rocket and spinach leaves. I then begin adding each ingredient, it's best done in a shallow bowl or platter. So kinda decorate the rocket/baby spinach like its a canvas....

    Then dressing is

    1 part olive oil
    1 part white wine vinegar
    1 part orange juice
And a teaspoon of Dijon mustard.

Put the prosciutto & dressing on just before serving, prosciutto to doesn't need to be hot, it's just better put in at least minute as keeps it crispy!!

I also do the Asian noodle one talked above yum!!

    (Ingredients)

1/2 to 1 Chinese cabbage , or 1/4 savoy cabbage (shredded finely)

    6 Shallots (Green onion) chopped

100 gms lightly roasted slivered almonds or pinenuts

1 packet of Chang's Original Fried noodles or crunchy noodles (I prefer the crunchy noodles.

    (Dressing)

    1/4 cup white vinegar
    1/4 cup castor sugar
    1 tblsp Soy sauce
    2 tsp sesame oil (optional)
    1/2 cup olive oil

    (Method)
In a saucepan combine all of the dressing ingredients and heat until the sugar is dissolved. Stir well and set aside to cool.

In a salad bowl combine cabbage, almonds and shallots.

Pour cooled dressing over and toss to coat.

Just before serving, toss through the fried noodles.

This salad recipe is great because it can be made in advance and eaten days after if you still have left overs. It goes well as an accompaniment to many dishes and if you wish you can also add shredded bbq chicken or pork if you want to make more of a meal of it.
This is super yummy. I serve this a lot with fish and have lots of comments from 'non salad eaters' saying how delicious it is. The dressing has a lovely sweet/ sour flavour

Strawberry, baby spinach and slivered almonds ... If you can get goats cheese and raspberry vinegar it just perfects it!
