    I forgot to take a picture of these all wrapped up but I put a mixture of these on a nice Christmas platter and wraped them up pretty for my DD's child care teachers.... Oreo truffles

    This is what I use (I actually made it in the thermy by adapting this recipe this year but have made it stove top many times prior to that):

    200g castor sugar
    250g cold butter cut into cubes
    5 whole eggs
    4-6 lemons depending on size

    Whisk eggs in a medium sized bowl, add the zest and juice of the lemons and whisk to combine.
    Transfer to a pot on low heat and keep whisking until the mixture has warmed up, then start adding the cubes of butter slowly, keep whisking all the while until all the butter is in.
    Keep whisking until it's thickened to your liking and then pour into sterilised jars.

    May I just say.. Thank you so very much!! I was going to make fudge the normal way but have just been so damn tired. Woohoo!

    Wow, so many beautiful homemade gifts! I love the layered cookie mix jars, might try them next year. These are last minute gifts for mil and fil from Ds1 & Ds2, just shortbread stars in jars, but the boys had fun helping make the dough and cut the shapes.
