Default What's the dish you made up with no recipe and it probably has a random name...

Tonight I'm making this capsicum, zucchini, squash in tomatoes veggie dish that I always serve over sausages.

I made it up, it has no recipe and no name. The basic ingredients (listed above with the addition of herbs and spices) are usually always the same, with some extra additions depending on the fridge/pantry situation. Sometimes I add kidney beans, spinach leaves and multi coloured capsicums.. Just depends on what I have on hand. DH loves it and requests it once a week.

What's your made up meal that your family love?

Sounds like a delicious version of ratatouille?

It's a warm beef salad with lentils, tomatoes, cucumber, dill pickles and mint. Sooooo yum, it's a huge hit and takes ten mins max to make!

Its not mine, its my DH's "invention" that he first made over a decade ago and may or may not be known/similar to other dishes out there but I've never heard of it before.
    We call it chicken chorizo.
I described in the dinner thread on here the other night.
Basically he takes a chicken breast fillet, skin off, and slits a hole down one side and stuffs it with a chorizo sausage. Sounds glamorous He then slowly fries it in a salsa sauce and serves it atop mashed potato and a side of green beans and a rainbow salad (grated carrot/beetroot/cucumber etc) and tops it with more salsa and chopped chorizo. It's one of my favourite meals ever!

2 sliced zucchinis layered in a baking dish, with a handful of diced bacon and some oregano sprinkled through. Pour 1 tin crushed tomatoes over it. Cover with breadcrumbs and a bit of parmesan. Bake at 180 until the zucchini is soft.
    It's so yummy!

ETA that's enough as a side for at least 4 adults.
