    Default Snacks to freeze

    Hi everyone

    I am looking for some good recipes for (relatively) healthy snacks that keep well in the freezer - looking for ideas so I can freeze for when baby arrives and I have some quick things I can take out and defrost throughout the day. Eg healthy muffins. I am not sure which recipes freeze well and which ones don't!

    I've found savoury muffins freeze well. I have chicken and roasted capsicum muffins in the freezer at the moment. I also have a batch of Anzac biscuits and choc chip biscuits frozen but they're not as healthy.

    I've just done Carrot cake and banana, maple and walnut bread. I always use about a third of the sugar - otherwise they are just way too sweet!

    As others have said muffins freeze okay. Any combination really. Though sometimes I find they go a bit dry.
    I also freeze
    Pikelets (sometimes with blueberries or banana I them)
    Mini quiches
    Broccoli nuggets
    Zucchini slice (I slice while hot and freeze I portions)
    Fritters (like corn/peas or potato)
    Sweet potato fritatta fingers
    Chicken nuggets
    Mini sausage rolls. ..
    Banana bread (sliced in portions)

    @BettyV the chicken and capsicum muffins sound interesting if you have the recipe.
    @beebs if there is an online recipe for the banana and walnt bread that would be great too.
    @crankyoldcow thanks for the links will check them out

    Any other failproof recipes welcome! Great ideas so far, didin't even think of sausage rolls or pikelets etc!

    I used this recipe as a base and just added roughly 1 cup of barbecue chicken chopped up (the type you get from woollies or Coles) and 1/3 cup of roasted capsicum strips as my fillings.

    I usually use taste website and then just add my own stuff like walnuts and maple syrup to the recipe.

    I don't know if you can freeze lactation cookie dough- it might kill the brewer's yeast. But they are awesome snacks!! Even if you can buy most of the ingredients now, or even practice in advance (they are safe during pregnancy), that would be good prep for a newborn- they are awesome for milk supply.
