    This is one of my all time favourite soups, and yay for a simplified version!

    Add fried tofu
    Keep boiling until mince mixture cooked through

    Season further with fish sauce and bit of sugar to taste.

    Serve with cooked rice noodles, finely shredded cabbage and fresh herbs eg. Mint, coriander.

    If you like, you can add dried shrimp (I blitz this in a mini processor) to the pork mince mixture. I also sometimes mince garlic and fry it then add it to the stock to add extra flavor. Also increase the amount of shrimp paste for more pungent flavor yummmm

    You're definitely a women after my own heart @Jontu, I love shrimp paste (Terasi) and dried shrimp and it marries so well with Pork mince. I am salivating just thinking about it.

    My house reeks of shrimp paste right now, as I wanted to use up some chicken, so made a chicken fried rice tonight.
