    Hehehe thats what we almost ended up having.... I couldn't convince hubby with the potato bake tho so beef and mushie ragu with mash it is. Wish I was having pot bake!! Yuuuum.

    I don't really have a recipe. But this is how I made it:

    Step 1. Made chicken stock
    - bag of chicken bones
    - 1 brown onion which I charred on the stove
    - 1 knob ginger charred on stove
    - 1 tsp salt
    - 1 tbsp fish sauce
    Bring all above to boil in large pot and prep step 2

    Step 2: prep prawns
    - 1/2 kilo prawn
    - 2 swimmer crab
    - 1 tbsp annatto seed
    - 2 tbsp oil

    - peel prawns and keep shells and head
    - heat some oil in pan then fry prawn shells about 5 min
    - add annatto seed and fry further 2 min
    - add some of the stock from step 1 and boil further 10 min for flavor
    - use a colander/sieve strain this prawn mix into the stock from step 1
    - rinse crab under cold water then remove top shell and break in half
    - add crab to stock and boil until cooked
    - add additional fish sauce to taste

    Step 3: get noodles ready
    - Rice noodles (dry)
    - Spring onion, coriander

    - boil large pot of water and cook noodles then drain
    - chop spring onion and coriander

    Step 4: Assemble soup
    - when ready to serve add prawns to step 2 to cook
    - put noodles in bowl
    - pour soup, crab, prawns in bowl
    - serve and garnish with herbs and chilli


    It is quite time consuming so something I make rarely and on days when I am home.
    Hope the instructions are ok.

    Subway for the child. A lovely chicken pho for me. Does anyone have a pho recipe as good as the bought ones?

    Pho is may all time favourite meal though only the beef one not chicken. Unfortunately can never get it to taste as good as the restaurant. I think the secret could be some msg!
    My mil does say to use lots of bones.

    Roast lamb done in a camp oven in our open fireplace. DH and I used to do this a lot before babies, but haven't bothered for ages. It's time to crack a bottle of red, sit by the fire and enjoy!
