Thanks guys! I'll add some tins of tuna and a couple of chicken breasts to the shopping list today.
One of the positive things of being more involved in what I'm eating (as in thinking about what I'm putting in my mouth) is that I've started to meal plan which has saved me heaps on shopping - both time and $$ as I only go once a week and only buy what I need - not a random array of items. Bonus!

7 layer rainbow cake with frosting. Did I eat it? Yeah I did. Do I regret it? ......eeeehhhh, undecided. It was a social blow out. DD was given a piece of birthday cake at her little friends birthday party but soundly rejected it and I ate it for her.

It happens, life happens, one piece of cake wont make you fat, a psychological guilt filled binge fest after it will.
Hope it was at least awesome! Mmm

Sorry I've been AWOL. Have had a few cr*ppy days but am still plugging away. Made these for lunch today. They were yummy. Needed longer to cook and had to keep a close eye on them though.
How is everyone going?

The one i tried last night i ended up needing to eat it with a knife and fork, it didn't hold i think i didn't get enough of the moisture out of the cauliflour first and maybe didnt pre bake it long enough.
But it was tasty enough
One head of cauliflour rice
1/2 c parmesan
1tsp dried italian herbs
Salt and pepper to taste
Cook riced cauliflower in microwave for 8 mins
Put in cheesecloth or something similiar and squeeze all of the moisture out
Mix in a bowl with rest if ingrediants, flatten in a baking paper lined pizza tray and bake 15-20 mins
Add toppings and back in yhe oven
