    Default Two chicken thighs :)

    Ideas needed for food for one year olds with a couple of chicken thighs. I'm feeling uninspired! They spoon feed and also self feed so either are good. Thanks!

    I make little nuggets- chop them up into bite sized pieces, toss in some melted butter and then cover with breadcrumbs and finely grated parmesan and bake

    Nuggets sound good. Do I need to use the butter? Would a normal egg wash and crumbs work?

    I make mine with 500g of chicken thighs that I whiz up. I add 1/2 to 1 cup of home made bread crumbs (whole meal or grain bread usually), mixed herbs (parsley, oregano, basil), crushed garlic, half a finely diced onion, Parmesan cheese ( we like lots!) and salt and pepper. Bind it all with an egg and roll into balls then either pan fry or bake in the oven.

    I also do a Thai style meatball with chicken, ginger, lime juice, fish sauce, soy sauce, sweet chilli sauce, garlic and coriander. Plus breadcrumbs and an egg to bind.

    Whiz up 500gms of chicken thighs, 1 carrot, 1 zucchini, a handful of feta and some mixed herbs. Roll into balls and shallow fry until cooked. Delish!

    You could do egg wash. I like the flavour the butter gives, but would still be nice without it
