I have a few pieces of oven baked chicken and was thinking what to do with it for lunch??
I wanted to ask if this would work, shred the chicken and mix with some grated veggies, cheese and cream cheese then roll in pastry like making sausage rolls. Wdyt? Will it work? Will it be dry?? I always have leftover oven baked chicken and other than a salad I never have a clue what to do with it. Especially something dd (16 months) can eat. Any other ideas? TIA

I often make a simple chicken pie with leftover chicken:
Sauté some onion & mushrooms
mix with shredded chicken, corn and grated cheese
Use frozen puff pastry to line pie dish.
ETA: if I have more time & can be bothered I make a quick white sauce to mix in too.

Chop it up quite fine and mix in with diced celery, mayo, salt & pepper. It's a yummy sandwich filling.

A pasta, with olive oil, garlic, lemon, spinach leaves etc. Or a creamy pasta using mushrooms, garlic and evaporated milk (or cream).

I don't know that sausage rolls will work. Usually you use raw chicken mince mixed with veg and egg. While it cooks or all binds together. So being already cooked you might find it just oozes out the sides of the pastry.
You could do that filling in a small ramekin and grill pastry on top like a little lidded pie.
Otherwise perhaps shredded chicken through some pasta with veg and tom pasta sauce or some cream cheese
Quiche or frittata would be lovely. Any other veg you have on hand. Perhaps some spuds, sweet potatoes and few herbs into a hot pan with the chicken. Cover with egg and cream/milk mix and grill to cook through.

Make jaffles or toasted sangas. Or freeze it and use it for pizza topping.
