How much money do you have to spend? I would call arouns because by time we paid for everyones food cleaned etc it was much easier to goto a hotel and have it catered. Some arent that expensive. If hes a geek and into computer games? Maybe you could just go out for a nice meal and eveyone pays for themselves. I don't think that's stingy at all. You could put money on bar or pay for meals vice versa.

If you decide to have something at home then some not too expensive food ideas:
Pot of curry with crusty bread
    Lasagna
    Chicken wings
    Salads
    Prawn crackers
    Fried rice
    Fried noodles
    Tiramisu
    Fruit platter

    Byo alcohol

Also just wanted to add that my friends and I are also "nerdy" and don't drink. For parties the entertainment was usually karaoke on the play station, poker, or just chatting.
Hope he has a great 21st. So lovely of you to pay for his trip and organize a party!!

Set up a massive LAN in the house for him and his mates. Or Star Wars/Lord of the ring/Star Trek marathon, or all the released to date Marvel movies. Get some frozen pizzas from Aldi (theyre yumm), add a bit of extra cheese, few bags of chips/lollies and a slab of fizzy. =D

How geeky? Is something like laser tag and a few pizzas an option?

We bought meat and salads, leb bread as well from our local Kebab shop and all made our own Kebabs for my 21st, we had a fire out the back and music.. I was pregnant at the time and had a HUGE thing for Tabouli (YUM!) so it worked well for me!
Wasn't exxy and everyone loved it..

That sounds great. Maybe we could combine that with a LAN/ Magic the Gathering card game tournament.
