    Default Quick and easy meals

    Our family is starting to get pretty busy weeknights with the kids sports, my yoga and DH's coaching. I am after some meal ideas that are quick, healthy and easy. Either to prepare and cook quickly or pre-cooked meals that are easy to reheat and serve. It would make life so much easier. Thanks in advance

    -Grill those pre-marinated chicken skewers, serve with some side salad or Uncle Bens 90 sec rice
    - Make a big pot of soup/ pasta sauce on the weekend and freeze
    - Fry/ grill some steaks, or burgers and make steak sandwiches or hamburgers with side salad / oven baked chips.
    - Jar sauces (?) Beef black bean or a chicken korma. With rice and steamed veggies.

    Pasta bake - I make it the night before or in the morning and just have to pop it in the oven

    Stir frys are great as it's only about 5 -10 mins cooking time ( use a rice cooker for quick rice or noodles even quicker) just pre cut the veggies and marinate meat that morning so when you come home your ready to cook

    Same with fish or beef tacos - marinate the beef strips or cubed fish in the morning, then just stir-fry when you get home, chop tomatoes, shred cheese and lettuce and guacamole takes 2 mins to make - buy taco shells or use mountain bread wraps and warm in oven

    Kebabs - marinate lamb or fish or make falafels in the morning and grill on BBQ for 10 mins, make a salad and tzatiki and wrap in warm pita bread or mountain bread wraps

    Pita pizzas are very quick - heat oven to max while you put some crushed tomatoes on a pita bread round, add cheese, chopped basil, feta, capsicum or any topping or meat you have and cook in oven for approx 5-10 mins , just make a quick salad to go with

    BBQ steak or salmon is easy as it takes 5 mins then just do salad or steamed veggies

    We are also doing sport in the evenings. Last weekend I made taco mince - but a huge batch with can tomatoes and chopped onion, zucchini and carrot. Froze a few serves and that was easy to defrost and have with soft taco shells, cheese, lettuce and sour cream - adding the veges takes the pressure off having the chop up too much salad stuff. If we don't have shells my daughter will have it with lettuce and cheese.

    Risotto in the rice cooker- put everything in the night before and store in fridge o/n then just switch on when you get home on the day.

    Slow cooker pot roast: leg of lamb, jacket potatoes, onions and carrots- leave on all day while you're out then throw some greens in the steamer or a pre washed salad on the side.

    Oven roast: pre cut veggies and meat into smallish pieces then spray lightly with olive oil and cover baking dishes in foil and store in fridge during the day. Just bake for 30 minutes with foil on when you get home while you are packing tomorrow's lunches etc.

    Zucchini slice- add sweet potato and other veg and then freeze. Great to reheat and tasty.

    Tuna mornay. Great to freeze.

    Frozen Rissoles and frozen mixed veg- pre make rissoles containing meat, rice, and veggies, then just defrost on the day and lightly fry while steaming some frozen veg mix.
