    I ended up doing apricot chicken tonight. It was a hit with my 3 kids and my husband loved it as well.

    I did 4 chicken thighs diced, 6 baby potatoes chopped into quarters, 3 small carrots, 4 squash diced and added sliced frozen beans about 10 mins before serving. I put in one tin of apricot nectar, 2 packets French onion soup, generous sprinkle of curry powder and a tbsp of massell chicken stock and also added water. Enough left over for my husband's lunch tomorrow.

    Beef and red wine casserole.
    I use the masterfoods slow cooker recipe base but change it a bit.
    I don't add tomato paste - never have any handy. I use two cans of crushed tomatoes, add a couple tsp chilli and garlic to taste. A whole lotta red wine (instead of just the 1/2 cup or so they recommend) and add loads of carrot and celery. Chuck in the beef and cook on high for 4 -5 hours.
    It's divine and sooo saucy

    If you're worried you'll be away from home too long, get one of those timer switches that you attach to the power point. The ones you use to have lamps come on at a certain time when you're away.
    We've done that with the slow cooker, put everything in it before leaving for the day, with it set to start cooking at 10 or so.
