    It's pretty easy - I bought 2 cooked blue swimmer crabs at the fish shop and pulled out all the meat ( you can get frozen fresh crabmeat from there as well which I've done before but just don't buy canned!) then chuck in a food processor with :
    1/2 bunch coriander
    1 clove garlic
    Chopped shallots ( small handful)
    Baby spinach ( small handful)
    1 egg
    Dash sweet chili sauce
    Squeeze of lime juice and zest
    Pepper
    1/2 cup bread ( or rice) crumbs

    Blitz and form into patties ( add more breadcrumbs if too wet) and put into fridge for an hour before frying - shallow fry in a little oil until golden ( makes about 6)

    I use a potato peeler to peel thin strips of cucumber , add lime juice and garlic to a good quality whole egg mayo ( or make your own!) and put on a warmed brioche bun ( if you can find them - or normal burger bun) with a glug of sweet chilli sauce

    Left over tuna pasta bake for DS, left over pumpkin soup for DH and a healthy choice meal for me. All feeling a bit rubbish and need to use up some food.
