I tend to have wraps more than sandwiches. I bring some salad stuff in at the beginning of the week to keep in the fridge at work so I don't really have to think about lunch in the morning. I also stock up my fruit bowl and aim to eat it all by the end of the week.

How about microwave soups, popcorn, crackers and dip, mixed nuts, custard, noodles or rice, roasted chickpeas.
You could always cook a bit extra the night before, or on the weekends do some marinating or meal prep? .
