My fave is marinated lamb salad-

Cube up some pumpkin & toast it in the oven/ lightly pan fry then cool.

Big bowl of spinach leaves, top it with some diced beetroot & some pine nuts.

I buy the Coles Grillz Lamb fillets & fry this in the pan.. You could grill it at the same time as the pumpkin if you wish.

Fry off some haloumi cheese pieces & add it to the spinach with the lamb & pumpkin.

I then get some taziki dip & add a bit of water to give it a runny consistency then drizzle over the salad. It's very yummy!

My hubby & his brothers actually EAT this salad when I make it too as they said it feels more like a meal.
