    Default Healthy, light, family friendly meals...

    I've lost my way

    I just ate a tin of spaghetti and a bowl of ice cream. I ate the ice cream first

    Carrot, beans, tomato, mushrooms (all raw) maybe Apple if you want more and a piece of meat. That's what we have basically every night and the kids love it!

    I love grilled/ BBQ seafood and salad in summer - luckily DS does as well - seafood or fish literally takes. 5 -10 mins to cook so its quick, easy and healthy

    Grilled sweet chilli salmon with a roast pumpkin and rocket salad or BBQ king prawns butterflied with lemon and garlic with a raw veggie and goats cheese salad

    Fish tacos - just stir fry cubed white fish like cod with garlic, coriander, cumin, lime juice, capsicum and serve in tacos with lettuce, homemade guacamole and cheese

    Falafel or lamb skewers with tzatiki, tabouli and pita bread

    Our fast and easy meals are pita pizzas ( pita bread with tomato, feta, mushrooms and cheese- 8 mins in oven ) or veggie frittata ( 4 eggs mixed with tomato , fresh herbs, baby spinach - cooked on stove top for 4 mins and finished in oven for another 5) and a green salad

    We often have San Choy Bow as our emergency meal, pork mince, garlic, optional chilli, shallots, bean sprouts and water chestnuts, coriander - brown the mince, add the rest, serve with iceberg lettuce. Takes 15 min

    Just dinner, maybe once every couple of weeks or if we have people coming over I'll make dessert but normally nothing - if DS is hungry before bed he usually had an apple or some yogurt , except this week I've been doing a test kitchen for Xmas desserts so the boys love this time of year !
