    Garlic/salt/pepper to taste
    I par boil chunky cubed potatoes then drizzle with oil sometimes garlic salt pepper and finish them off in the oven.
    Pop prosciutto in the oven as well.
    Allow everything to cool slightly then shred prosciutto and mix with potatoes and table spoon if sour cream. Load into the bowl then dollop the rest of the sour cream on too and sprinkle chives over

    We use little potatoes cut in half with their skin on, onions, bacon, eggs, salt and pepper, shallots, mayo and sour cream.

    I also make another when I need it quickly with potatoes, carrots and mayo. Sometimes a little onion or shallots.

    Now I know what I want for dinner

    Blue Cheese Potato Salad
    1kg washed baby potatoes (halved)
    1tsp chicken stock powder
    4 rashers bacon (chopped)
    1 packet 150g blue castello cheese (crumbled)
    1 small red onion (finely diced)
    1/4 cup polish ogorki dill pickled cucumbers (finely diced)
    1/4 cup greek yoghurt
    2tbsp mayo
    2tsp lemon juice
    2tbsp chives (chopped)
    Pepper to taste

    1. Cook potatoes in water with chicken stock powder until just tender.
    2. Drain potatoes and leave to cool.
    3. Saute bacon until crisp.
    4. Place cooled potatoes, bacon, onion, blue cheese, cucumbers into a large bowl.
    5. In another bowl mix together the yoghurt, mayo, lemon juice, chives and pepper.
    6. Pour dressing over the potatoes and gently mix.
    Enjoy!!!

    • home-made mayonnaise (good olive oil, egg yolks, lemon juice, salt)
    • baby potatoes, in jackets, boiled until slightly firm, quartered
    • dijon mustard
    • sliced spring onions


    Yum yum. More nutritious without peeling the potatoes, better texture, and much quicker and easier to prepare
