    Google vegetarian shepherds pie. They are delicious made with lentils.
    I made a beetroot risotto the other day. Roasted, peeled then puréed the beetroot. Made a basic risotto and added the beetroot about 5 minutes before end if cooking. Delicious. Try it with some rocket and horseradish cream.

    Dinner (not the best looking but really yummy!)

    Quinoa risotto with baby peas, mushrooms, leek, thyme, garlic & Parmesan cheese.

    Umm not really - it's sort of more earthy tasting to me - haha!! I don't even know how to describe it. But I like it

    I think it's better than couscous.
    Definately nuttier, earthier.

    So versatile you should try it.
