@Tamtam don't buy too much at once, you will build up your supply as you go. I would recommend hunting around for a wholefoods wholesaler so you can buy nuts/seeds and grains in bulk!
Also a tip with the stock, your consultant will obviously want to make it the proper way but next time you make it, instead of adding all the salt and keeping it in your fridge. Omit the salt and freeze it in ice cube trays. Most recipes call for a tablespoon of it so you can just pop out a cube and put it in.
