    I'm calling it an Asian inspired chicken and cashew stew thingy with rice. It started as a stir fry but got too saucy. It was a bit of a "whatever's in the fridge" kinda thing!

    DD said it was really yummy "but not this or this or this, just the chicken". Lol.

    No recipe at all! It's just carrot, capsicum, zucchini, mushroom, cashews, and chicken cooked in the wok with chicken stock, a little soy, and garlic. Super easy and used up stuff from the fridge. My meals have been really boring and uninspired lately but this was tastier than expected!
