    Tonight's dinner is a sort of con carne type thing I made up so I could use the ingredients I had on hand.

    Stir-fry beef strips, can of four bean mix, 3 small carrots, onion, half a red capsicum, tin of crushed tomato, some water, 2 tbsp tomato paste, cumin, paprika - I think that's it. Served with rice.

    I've been working a bit so haven't been home for dinner.

    Tonight we're having veggie burgers. They consist of bubble and squeak patties, home made garlic aioli, caramelised onions and salad. I'll post a pic when they're ready.

    If they taste anything like the ones we get from the take away shop they should be. Only difference is 8ur patties won't be deep fried and we have ploughmans rolls instead of white. So healthier and cheaper.

    Yum! I might make something similar this week.

    As for us, I made dd crumbed eggplant and zucchini which she devoured. I gave her some mayo to dip with. Simple dinner tonight for her as she had a large serve of broccoli, spinach and bacon risotto for lunch that my DH made (I was very impressed!)
    Sorry no pics though.

    Chicken, mushroom & parsley sausages with mashed potato, herb sautéed(sp?) onion & fresh tomato (at DSs request) not the super most healthiest meal and yes my kids have had sausages twice this week (I know bad mumma )
