    Vegie quiche/ frittata is always a winner and freezes well.

    I love the roast vegie salad idea too!

    Have you checked out Taste.com.au ?? squillions of great recipes and they have a handy app to! I always turn to it for ideas.

    Green beans in garlic and breadcrumbs. (Can use asparagus if available too)
    I just pop the beans in an oven proof dish, crush a few cloves of fresh garlic over the top, drizzle with olive oil, sprinkle with breadcrumbs and parmesan and bake in a moderate oven for about 10-15mins.

    It should! We also do melanzane - which is just snitzel eggplant - cut thin slices and crumb like you would a snitzel ( I add parm, garlic powder and dried parsley) - DS loves it!

    Fresh corn on the cob is a regular here. Also sautéed mushrooms with garlic. Most of our others have been mentioned.

    Yum! I'm the only one in our house that eats Brussels sprouts, I wouldn't have to share, lol!
