    I make potato salad with aoli from Tasman meats.
    Just potatoes , aoli, fried off bacon , boiled eggs and spring onion
    Pasta salad I make Mediterranean style.
    Pasta spirals, Kalamata olives, sundries tomatoes , ham and pepperoni . Dressing is vinegar and seeded mustard as well as half oil from sundried tomatoes salt and pepper.

    Totally simple but delicious Pasta meal we have is pan fried diced onion. Add these to Cooked spiral noodles and a few handfuls of grated cheese. Heavenly!

    My potato salad is cook potatoes, dice into size pieces you want. A few shakes of vinegar over top then refrigerate until cool. Then add sour cream and whole egg mayo work thin slices of Spanish onion and seeded mustard. Back in fridge til chilled and preferably even overnight for awesome flavour.

    This should come with a warning - it is truly amazing!!!

    Blue Cheese Potato Salad

    1kg washed baby potatoes (halved)
    1tsp chicken stock powder
    4 rashers bacon (chopped)
    1 packet 150g blue castello cheese (crumbled finely)
    1 small red onion (finely diced)
    1/4 cup polish ogorki dill pickled cucumbers (finely diced)
    1/4 cup greek yoghurt
    2tbsp mayo
    2tsp lemon juice
    2tbsp chives (chopped)
    Pepper to taste

    1. Cook potatoes in water with chicken stock powder until just tender.
    2. Drain potatoes and leave to cool.
    3. Saute bacon until crisp, drain on some paper towel.
    4. Place cooled potatoes, bacon, onion, blue cheese, cucumbers into a serving bowl.
    5. In another small bowl mix together the dressing - yoghurt, mayo, lemon juice, chives and pepper.
    6. Pour dressing over the potatoes and gently mix.
    Enjoy!!!

    I hate the fact that most potato salads have mayo in especially since I can't eat mayo
    Some great alternatives already on here to try

    My recipe is always a big hit at our social gatherings and is super easy to make too!

    Boil potatoes and cool
    Add sour cream and teaspoon of mustard (I use mild Uk) and mix through well and sprinkle with chives or spring onion. And voila!
