Veggetarian sausages, steamed greens roast carrot + parsnip with mushroom sauce. Not our usual style of eating but it was nice to have something simple.

Dont really know what its called, maybe Mexican surprise, but its yummy.

Coat some chicken thighs in taco seasoning mix, pop them in a casserole dish with chopped onion, capsicum, corn kernels, celery and kidney beans, mix through a jar of salsa and a few table spoons of sour cream, and bake in the oven on about 180 for a few hours. Serve with a squeeze of lime juice, a dollop of sour cream and brown rice.
