    Mushroom, zucchini and pumpkin "quiche" (vegan) and salad. Looking forward to it on such a hot day

    It was so good and simple! Really not much more to it than the ingredients - I made a quick dressing for the salsa with lime juice, minced red chilli, sesame oil, brown sugar, rice wine vinegar...I think that was it. And the coriander! Just chopped everything up into little pieces. And the "steaks" ended up just being strips. Lightly fried in a little soy. It was soooo good.
