    Default Time to roast vegetables?

    Hi guys,

    I'm a roast novice!!

    When roasting potatoes, pumpkin, carrot and onion do you put them all on at the same time? Or do some go in earlier than others?

    Depends on how you've got them cut up. Potatoes and carrots will take the longest to cook then onion and pumpkin :-)

    I always par boil my potatoes, drain them off and give them a good shake to rough up the edges before oiling them so they go nice and crispy... I also use duck fat (naughty but so yummy!) I usually cut up carrot, parsnip, zucchini, cherry tomato and capsicum and roast on a separate tray with a splash of balsamic dressing (they only take 30 - 45 mins) YUM I want roast veg for tea now!

    Ps: cut things into similar sizes so they will 'generally' need the same amount of cooking time (except of course the potato and carrot and pp mentioned). Also porous Vegies require less time (like zucchini and squash) :-)

    I half boil my veges but also heat the dish with a bit of oil in it in the oven before placing the veges in. Sweet potato, potato and carrot go in together for usually half an hour at 180 and pumpkin and onion in for about 20. So much quicker if you're in a rush and makes them nice and crisp on the outside but soft in the middle.
